Description

White pepper is a spice produced from the dried fruit of the pepper plant, as is black pepper that grows in tropical Asian countries. It is usually milder than black pepper, with less complex flavor. White pepper is made from fully ripe pepper berries. They are soaked in water for about 10 days, leading to fermentation. Then their skins are removed, which also removes some of the hot piperine compound, as well as volatile oils and compounds that give black pepper its aroma. As a result, white pepper has a different flavor and heat component than black pepper. White pepper retains the full pungency of black pepper, but has an altered flavour due to partial loss of aroma compounds. White pepper consists of only the inner seed of the pepper berry, with the pericarp removed. To make white pepper, the berry is picked fully ripe. Its outer shrunken skin is rubbed off, exposing the dried, greyish-white pepper inside.

Selection Guide

Avoid purchasing pre- crushed pepper as it has volatile compounds that loose the aroma very quickly. Buy white peppercorns and make small amounts of powder at home. Whole peppercorns should be heavy, whole and without any blemishes.
