Description

Xanthan gum is basically used as a thickening agent or as an emulsifier. It is a natural polysaccharide that is build by the process of fermenting glucose or sucrose with a micro-organism Xanthomonas Campestris. It is an odorless, white light or yellow light powder. Xanthan Gum has a good freeze/thaw stability and is compatible with all commercial thickeners and alcohol. It is utilised as a thickener, stabilizer, emulgator, or foam stabilizer in food and beverages. It is also used in salad dressings and sauces.
