Simple kheer prepared with caramel syrup, sabudana and milk.The caramel syrup added in this kheer makes more delicious also at the same time gives a beautiful colour.

Take sbudana in a bowl. Rinse them till water runs clear of starch. Drain and soak the pearls in 1 cup water for at least 2 hours. Meanwhile boil 2 cup of milk and keep aside.

After 2 hours sabudana will absorb water , swell and become soft and almost double in size .

Heat milk in a non stick kadai till one boil and then add sabudana to it.Cook on low flame stirring in between.take care so that sabudana will not stick to the bottom.cook it untill sabudana become partially transparent.

On the other side take one pan and add 1tbsp of ghee and add sugar in it and stir it continuously till sugar gets melted on medium flame.When melted sugar colour changes to brown switch off the flame , add water and cover it for 2 -3 minutes. Stirr it and the caramel is ready.

Add this caramel to prepared sabudana kheer ,mix well,add nuts and cardamom powder and cook for 1 minute.

Garnish it with rose petals.Serve hot or chilled.
