Kheer is a very rich and creamy rice pudding which is a popular traditional dessert in India. Kheer can be made in different flavours like rose, badam, saffron etc. I have made carrot rice kheer with aromatic flavour of saffron and cardamom.

Ingredients For Carrot Rice Kheer Recipe

Methods
  • 1. Soak rice in water for 30 minutes and then strain it.
  • 2. Heat ghee in pan and put grated carrot.
  • 3. Roast on medium heat for 5 minutes.
  • 4. Add washed rice in grated caarrot mix well and roast for 2 minutes.
  • 5. Add boiled milk and mix well.
  • 6. Cover and cook on medium low heat till it thickened.
  • 7. Add sugar, saffron and cardamon powder. Mix well and switch off the heat.
  • 8. When it's done, transfer in serving bowl and garnish with chopped pistachios and saffron threads.
