Ingredients For Chicken Ghee Rost Recipe

Methods
  • 1. Wash and pat dry chicken and make cuts.
  • 2. Make Marination with seasme oil, hung curd, ginger garlic paste, salt deggi mirch, coriander powder, and lemon juice.
  • 3. In a pan add ghee and roast dry red chilli, garlic cloves, fennel seeds, cumin seeds, red whole chillies, fenugreek seeds, cinnamon stick, fresh grated coconut, black peppercorns and ginger.
  • 4. Fry finely sliced onion’s to make fried onion (barista).
  • 5. In a grinder add fried onions and ghee roasted spices to make paste.
  • 6. In a pan add ghee and saute marinated chicken (when it will release water kindly remove chicken off the heat with water) repeat the process and cook entire marinated chicken.
  • 7. After removing chicken add ghee again and curry leaves with dry red whole chilli and add spice paste made and cook for 5-6 minutes.
  • 8. Once the paste starts leaving oil add cooked chicken with its water (juices) and add 1 glass water.
  • 9. Cover the chicken with a lid on slow heat and let it cook for another 20 minutes.
  • 10. Garnish chicken with fresh coriander springs, barista, lemon wedges or fried garlic. And serve hot.
