For the recipe use a nonstick pan. Chop finely all the greens i.e. Greener part of spring onions, take 2 eggs separate the egg whites of each in a separate bowl and both the yolks in a 3rd bowl.

Methods
  • 1. 1. To 0ne part egg white add all the chopped greens plus salt and mix well. 2. to the second part egg white just add the salt and whip lightly 3. to the egg whites add salt, Deggi Mirch and whip
  • 2. In a 6inch nonstick pan first melt the butter and then with flame in sim add the egg white with green when it starts firming up pus the egg towards the extreme outer circumference of the pan making the inner circle empty.
  • 3. Then pour in the egg white from the second bowl and repeat the procedure as above leaving the inner most circular space for the rest of the egg.
  • 4. Finally pour in Yolks with Deggi Mirch in the center and cover the pan until the yolks firm up. Then slide off the omelette and serve with butter toast and some potatoe chips
