Methods
  • 1. First de-bone the chicken breast and slice it into two halves from the middle very carefully without cutting it all the way through. Open it from the middle and flatten it evenly by covering it with a plastic film and hitting it gently with a meat hammer.
  • 2. Once you have spread open the chicken breasts season them with salt and pepper on both sides.
  • 3. Grate the cheese and chop the pistachios. Spread the grated cheese and chopped pistachio over the chicken breast leaving some space at the edges.
  • 4. Gently and carefully roll the chicken breast into a spiral shape and close the ends with the wooden picks.
  • 5. In an oven-friendly skillet add the butter and let it melt. Add rosemary and garlic to this.
  • 6. Add the rolled breasts to this and turn the flame high. We just want to brown the outer sides of the roulade which won't take more than 2 minutes.
  • 7. Once the roulade has browned transfer the skillet to a pre-heated oven at 220° C and let it cook for 15 minutes.
  • 8. Once the roulade it out of the oven let it rest for at least 10 minutes before digging into it.
