Methods

How to make Coconut Paradise Recipe

1. Preheat the oven at 180 degree celsius, and line a square baking tin with parchment paper.
2. Melt the chocolate in the microwave, and pour it in the lined tin and let it set for two hours.
3. Meanwhile take a bowl, add 1/4 cup of butter and 1/2 cup caster sugar, and whisk it using a hand blender, until pale and fluffy.
4. Now gradually pour in 1 lightly beaten egg in the pale butter and sugar mixture while whisking.
5. Once the butter, sugar and egg mixture is doubled in volume, add in 1/2 cup desiccated coconut, 1/4 cup of raisin and cherries each, and mix it with light hands.
6. Transfer the batter in the lined tin in which the melted chocolate was out to set, and put it to bake for 35-40 minutes, or until golden brown.
7. Let it cool, then turn out and cut into slices/squares to serve.
