Firstly cut the cauliflower into very small florets and wash really well. Now, in a vessel, boil some water and cook the cauliflower until soft. Now strain them and cool down completely. Set aside 3-4 pieces for using later. Now blend the cauliflower coarsely without adding any water.

Now, add the blended cauliflower in a pan and keep stirring continuously. Now close the lid of the pan and cook in low heat for 15 minutes.

While cauliflower is being cooked ,we will prepare the caramel. Place 150 gram sugar in a heavy bottom pan over medium heat and add 1 teaspoon water. Move the pan to keep the sugar heating evenly. The sugar will start clumping first and then start to melt. Gradually it will turn into brown liquid caramel.

Keep aside some caramel for making sugar decorations such as caramel cup, spirals. Coat the cauliflowers we kept aside in the beginning to make caramel coated cauliflower. Make the caramel decorations like caramel cup, spirals.

After cooking cauliflower for 15 minutes, pour caramel and stir continuously till everything is well combined. Add 80 ml milk and cook for another 10 minutes. By this time, the cauliflower mixture will start separating from the pan. Switch off the. The main element is now ready.

Now we will prepare caramel sauce. For this, again make caramel using 50 grams sugar. Add 20 ml milk and stir continuously to make a thick sauce. Caramel sauce is ready.

For plating, place caramel cup at the center of a serving plate. Place caramel cauliflower on the caramel cup . Garnish with sugar decorations, caramel coated cauliflower and caramel sauce. Serve chilled.
