Indori poha is a very famous street food of Indore. Tried it for first time and found the taste really nice! These poha are served with tea and jalebis, but i like it just like that so have served it just like that!!!

In a strainer take poha and wash with water 3-4 times. Take care all poha don't get mixed up.

To the washed poha add sugar, salt and turmeric powder. Mix well!

For tempering, in a non-stick pan add oil and heat it. Add mustard seeds and fennel seeds to it.

When mustard seeds crackle add the chopped onions (3/4th only), curry leaves and green chilli.

After the onions becomes pinkish add ginger powder, red chilli powder, coriander seeds powder, roasted cumin seeds powder and garam masala powder to it, mix well.

Now add the mixture of poha to it and mix everything properly and cover it. Let it cook for about 2-3 minutes and then mix well.

Switch off the gas and add the lemon juice.

While serving, top the ready Indori Poha with chopped onions (1/4 part) and Bhujiya sev. We can add pomegranates and spicy boondi to it.
