In a mixture jar, grind the cashews into a fine powder. In this step, one has to be very careful. Grinding should be done in pulse mode. Otherwise the cashews will release oil and we really don't want that.

In a pan (preferably non stick), mix the sugar and water. In low flame, stir and form one string consistency syrup.

Now gradually, add the ground cashew powder and mix well. Add the cardamom powder and continue mixing till the mixture forms a dough and starts releasing the sides of the pan. Add ghee and mix and switch off the flame.

Grease a butter paper with ghee and transfer the cashew dough there. Knead slightly to get a smooth dough. Now cover the dough with another piece of butter paper and roll according to desired thickness. Cut into diamond shapes. Give it a standing time of about an hour. Delicious kaju barfi is ready.
