Recipe Notes

Grinding cashews should be done in pulse mode. Otherwise the cashews will release oil and we really don't want that.

Ingredients For Kaju Barfi Recipe

Methods
  • 1. In a mixture jar, grind the cashews into a fine powder. In this step, one has to be very careful. Grinding should be done in pulse mode. Otherwise the cashews will release oil and we really don't want that.
  • 2. In a pan (preferably non stick), mix the sugar and water. In low flame, stir and form one string consistency syrup.
  • 3. Now gradually, add the ground cashew powder and mix well. Add the cardamom powder and continue mixing till the mixture  forms a dough and starts releasing the sides of the pan. Add ghee and mix and switch off the flame.
  • 4. Grease a butter paper with ghee and transfer the cashew dough there. Knead slightly to get a smooth dough. Now cover the dough with another piece of butter paper and roll according to desired thickness. Cut into diamond shapes. Give it a standing time of about an hour. Delicious kaju barfi is ready.
