Pan Raviolis served with thandai Rabri Recipe

Today I am presenting a very innovative and amazingly tasty dessert, which has the flavours of pan, gulkand and thandai in it. Traditionally Holi celebrations are incomplete without Gujiya so here I have given them the flavour of Pan and mukhwas and Shape is of Raviolis. Along with how can we forget the Thandai so here I have made the Rabri with thandai flavour and comes out with a very eye catching green colour…

Ingredients For Pan Raviolis served with thandai Rabri Recipe

Methods
  • 1. For Pan raviolis : In a mixing bowl, add maida and ghee and mix well with hands and crumble the flour. Add pinch of salt and mix well.
  • 2. Wash and grind the pan leaves into a smooth purée. Add this purée to the flour mixture and mix well and knead the soft dough. Use water if needed. Cover the dough with damp cloth and let it rest for 10-15 mins.
  • 3. For Stuffing, add khoya in a pan and roast it for 1-2 mins. Turn off the flame and let it cool. Now mix all other ingredients for stuffing and mix well. Stuffing is ready.
  • 4. Now make 5 portions out the dough and roll each into a thin Poori, cut with the help cookies cutter into small circles. Now add stuffing in centre, put the other circle on it. Seal the edges with water and give a nice pattern on edges with fork. Deep fry all the ravioli on slow flame from all sides.
  • 5. For Sugar Syrup, add sugar and water in pan and let it boil for 5 mins, keep stirring until sugar gets dissolved. Don’t give it any string consistency as wel need to soak the raviolis into it. Dip all the ready raviolis into the ready warm sugar syrup and soak for few mins.
  • 6. For Thandai Rabri, cut the edges and grind the bread slices in mixer and dry roast in a pan for few mins. Do not get them brown. take a pan add milk and let it boil for 5-7 mins on slow flame. Now mix the milk powder in two tbsp milk and mix it in boiling milk. Keep stirring.
  • 7. Now add thandai powder to it and mix well. Now add roasted bread powder to it and cook it further for 5 mins. Add sugar and mix well. garnish with chopped dry fruits and saffron strands. Now our instant thandai rabri is ready to serve.
  • 8. Serve this thandai rabri chilled with ready pan gulkand raviolis and give your taste buds a unique and amazing taste.
