It’s traditional recipe of aloo pyaaz ki sabzi which is served with tikkad ( Indian bread). Traditional this sabzi is made in ghee.

Ingredients For Rajasthani Aloo Pyaaz ki Sabzi Recipe

Methods
  • 1. Firstly will shallow fry baby potatoes until golden brown edges. And then in same oil will shallow fry baby onions.
  • 2. Now purée onion, ginger, garlic and green chillies.
  • 3. Purée roughly chopped tomatoes too
  • 4. In a same pan reduce the oil and add whole spices followed by onion purée
  • 5. Cook onion paste until raw smell goes away. Then add dry spices
  • 6. Add haldi powder, dhaniya powder, red chilli powder and garam masala
  • 7. Cook for a minute on slow flame.
  • 8. Now add tomato purée and cook it stirring continuously
  • 9. Now add Kasturi methi (crushed )
  • 10. Now cover and cook it stirring occasionally until oil separates
  • 11. Now add 1 tbsp curd and 2tsp ghee and cook for a minute
  • 12. Then add fried onion and potatoes. Add 1/2 cup water and salt to taste. Stir and cook it covered
  • 13. Stir occasionally in between. Cook for around 10 minutes on medium flame until oil separates.
  • 14. It’s ready to serve hot with tikkad or chapati.
