Rosy Harmony Delight Recipe

This desert is my own creation. I combined milk and condensed milk with rose and made a harmony desert. Then I served it with condensed milk reduction and dry fruits. It's a flavourful unique recipe for the festivities.

Recipe Notes

Stir condensed milk and paneer continuously so that it doesn't stick to the pan. Be careful while preparing the condensed milk reduction. Simmer the flame and keep on stirring.

Methods
  • 1. Take a heavy bottom pan. Pour 1 litre of milk. Boil the milk in medium high flame.
  • 2. Squeeze the lemon juice into the milk. Let the milk curdle. Stir it slowly.
  • 3. Take a muslin cloth, line up in a pan and pour the curdled milk on it.
  • 4. Squeeze it by gathering together the four corners. Wash lightly the curdled paneer along with the muslin cloth so that the sourness of lemon gets removed.
  • 5. Hang it for 30 minutes so that all the water drains out. Knead the paneer nicely till the mixture becomes smooth.
  • 6. Now, heat ghee in a pan and add the paneer. Mix ¾ tin condensed milk and stir continuously until it leaves the side of the pan. At this stage, check the sweetness. If needed add sugar.
  • 7. Add rose syrup and mix properly. Switch off the flame and add rose essence and chopped dry fruits. Make round balls and keep aside.
  • 8. In another heavy bottom pan, add ½ litre milk with ¼ tin condensed milk and 2 tbsp sugar. Mix well to make milkmaid reduction.
  • 9. In a plate spread rose petals and roll the  rosy balls with rose petals. Let it cover the balls all around.
  • 10. Now, to assemble, spread the condensed milk reduction in the centre of the plate and place the Rosy balls over it. Cut it into two halves. Garnish with chopped dry fruits. Rose Harmony Delight is ready.
