SWEET POTATO DUMPLINGS RECIPE

A Traditional Makar Sankranti special Recipe , where sweet potato dumplings are stuffed with milkmaid coconut and jaggery filling and then dunked in thickened rich milkmaid and date palm jaggery.

Ingredients For SWEET POTATO DUMPLINGS RECIPE

Methods
  • 1. Heat a pan, add coconut and 1/2 cup jaggery mix it and let it caramelize over low medium heat .
  • 2. When the jaggery has melted, continue stirring without burning the bottom . Keep the flame low , when the coconut turn in color, add semolina , milk powder and 2 tbsp milkmaid and mix well .
  • 3. Mix everything properly and turn off the heat and keep aside .
  • 4. In another side, boil the potatoes have become soft , then peel the skins and make a mash when completely cool . Now add gobindo bhog rice flour , all purpose flour and milkmaid then make a smooth dough . Cover it and take rest for 10 minutes .
  • 5. In a deep bottom pan, add milk to low medium heat to thicken .
  • 6. Alongside , the dumplings can be shaped . Make small balls of the sweet potatoes dough and take one ball at a time . Gently flatten on the palm of your hand and spoon in a 1 tbs full of coconut filling in it .
  • 7. Cover the filling with both ends of the dough and press with your to seal the edges . Then shape it in a cylinder with pointed edges . Arrange them on a dry plate and keep aside .
  • 8. When the milk has reduced to 2/3 rd add milkmaid and when the milk has thickened , add the dumplings one by one very gently , and let the milk boil .
  • 9. When it starts to bubble on the sides add the jaggery and give it a gentle stir and cook for 5 minutes then turn off the flame .
  • 10. Cover it 6-8 minutes then ready to serve but it will serve when it has completely cooled down . It takes a few hours for the flavours to infuse .
