Spinach Tortillas Wrap with Hummus & Veggies Stuffing

A healthy wrap in which a Spinach Tortilla is stuffed with Sauteed Exotic Veggies, Hummus and cheese dip (optional). It has mainly 3 items, rolled together into 1, resulting in a very filling and scrumptious wrap. It can be made easily at home with little bit of moderate cooking.

Ingredients For Spinach Tortillas Wrap with Hummus & Veggies Stuffing

Methods
  • 1. For preparing the Tortillas, mix the flour, with a little bit of baking powder, and blanched spinach puree. You can also use Betroot puree in case you need Red colored tortillas. Rest the dough for 20 mins. Once the dough is ready, make Tortillas (like chapatis/rotis).
  • 2. For the Hummus, take all the boiled chickpeas, some olive oil, white sesame seeds, 4-5 cloves of garlic, and some salt. Mix well to get a consistent paste. Your Hummus is ready. Serve with some olive oil on top in a bowl.
  • 3. Next up with the sauteed veggies. Drizzle some olive oil on a hot pan, put some chopped garlic and onions. Cook for 1-2 mins. Then add all the remaining vegetables (broccoli, bell peppers, corn kernels). You can also use other vegetables as per your convenience and/or availability.
  • 4. Mix all the vegetables well. Add some salt. Then add Paneer to the mixture and mix slowly, so that the paneer cubes do not break. Add some Oregano & Chilli Flakes. Let it cook for another couple of minutes. Let it cool down.
  • 5. Now combine all the 3 components together. Take the tortillas and spread the hummus all over the tortilla. Put the sauteed veggies in the middle of the tortillas, and add some Cheese & Jalpeno Dip (optional). Roll it like a wrap using a paper napkin or aluminium foil. Cut it from the middle and enjoy.
