Vegetable Au Gratin Recipe

A mix Veggie Au Gratin! ?????? ? served with Olive Toast Crunchies! Basically it is Veggies tossed in a luxurious sauce and topped with cheese and even breadcrumbs and baked to achieve a crust! . A healthy, cheesy and hearty meal that will make you want to ask for more! . One of my favourites if done properly and garnished with a lot of fresh Parsley and with Olive Toast! .

Ingredients For Vegetable Au Gratin Recipe

Methods
  • 1. Heat butter - when it is melting add the flour.
  • 2. Cook the flour for 3-5 minutes then immediately add milk.
  • 3. Cook in medium flame, it will bubble. Keep stirring with a whisk. Whisk vigorously until smooth so that there are no lumps forming. It will start to thicken,I switched to a spatula right about now.
  • 4. It will form a smooth creamy paste like consistency, it should coat the laddle, and when you draw a line it should stand still. This is the right consistency.
  • 5. Add salt and pepper. If you want you can add nutmeg powder too. Mix well. Now the basic white sauce (BĂ©chamel) is ready.
  • 6. Add 1 1/2 cup cheese to the sauce, mix it and switch off. Now rinse all the vegetables and cook them until soft yet crunchy enough to bite. I pressure cooked them for 2 whistles. Preheat oven at 200 deg C for 10 minutes.
  • 7. Transfer it to an oven safe baking tray, Sprinkle remaining 1/4 cup cheese on top. Bake in preheated oven at 200 Deg C for 20 minutes or util the top turns golden. I grilled for the last 3 minutes for a crusty top.
  • 8. Serve with your favourite kind of toast!
