Methods

How to make Aam Panna Recipe

1. Boil the mangoes in pressure cooker till 2 whistles.
2. Let it cool completely.
3. Soak the jaggery in little water to form a thick syrup.
4. Once the mangoes are cool, deskin and deseed them and remove the pulp.
5. Using a sieve, nicely sieve the pulp to discard any fibre.
6. Now gradually add the jaggery syrup. Sieve the syrup too.
7. Adjust the sweetness.
8. Add the rock salt, Cumin powder and black pepper.
9. This is our thick concentration of Aam Panna.
10. Fill in bottles and refrigerate.
11. When ever thirst strikes remove desired amount of pulp in your serving glass, add chilled water and adjust the spices and jaggery.
12. Enjoy cold.
