Take out the flour in a big bowl, add salt and oil to it, mix it well, and after adding little water make a soft dough like chapati dough, do not knead the dough too much, make it smooth, just bind the dough. Take, cover the dough and keep it for 20 minutes, the dough will rise and set. Till the time the dough is set, prepare the stuffing for Kachori.

Peel the boiled potatoes and take them. Heat a pan, put 2 tsp oil in the pan, when the oil is hot, add finely chopped green chilies, along with grated ginger and fry the spices for a while. Crush coriander powder, cumin powder and peeled potatoes finely with hands and put them in the spices. Add red chili powder, mango powder, garam masala powder, salt and finely chopped green coriander and fry on low flame for 2-3 minutes after mixing everything well. Stuffing is ready, turn off the gas and take out the stuffing in a bowl so that it cools down quickly.

After the dough is set and ready, prepare small lemon sized balls from the dough. Now take a ball, make it round and keep it on the hand, enlarge it with the help of fingers, make it like a basket. Put 2 tsp stuffing in this basket of dough and lift the dough from all sides and close the stuffing properly, prepare all the kachoris like this.

For frying kachoris, heat oil in a pan. Prepare the stuffed kachoris by giving them light pressure by hand or rolling pin, and roll them in medium hot oil, put as many kachoris as they can in the pan at a time. When the kachoris start to swell and become slightly cooked from the bottom, then turn them over, fry the kachoris until they turn golden brown, keep the gas medium and slow, then only the kachoris will become crispy. Take out the golden brown kachoris on a napkin placed in a plate and keep them. Prepare all the kachoris by frying in the same way.

Crispy potato kachoris are ready, serve kachoris with green coriander chutney or sweet chutney or tomato sauce.
