Add ghee in a pan and add atta, Roast atta on low-medium heat till golden brown.

This will take 4-5 minutes. Make sure to stir continuously and once the atta is roasted, ghee will start separating from the sides. This is the indication that atta is roasted very well. Switch off the flame. Meanwhile, heat water in a separate pan till it is luke warm.

Add first 2 cups of luke warm water in roasted atta. Keep stirring continuously to make sure that no lumps are present. Once the mixture is smooth, add the remaining 1 cup of water.

Stir well. Switch on the flame again and cook the atta mixture on medium flame. Do not forget to stir.Once the mixture is little thick, add sugar cashews and keep stirring.

This will help with no lumps and sticking from bottom.Cook till the mixture starts leaving sides of the pan.Grease a tray. Spread the mixture evenly on the plate. The thickness is totally your choice. I personally love this Barfi to be little thicker

Now garnish with dry fruits of your own choice. I have used cashews .Once, cooled down a bit, cut into desired shape. This can easily be taken out. Its ready.
