Baked Oreo Lemon Cheesecake Using Hung curd Recipe

Cheesecakes simply melt in mouth and their versatality makes them an all time favourite.Though time consuming and patience intensive,its a sweet fruit of labour.In this cake,the tanginess of lemon blends perfectly with the chocolaty sweetness of Oreo biscuits. This particular recipe can be had either ways...baked as well as non baked. The use of homemade fresh cream cheese adds to the freshness of the cheesecake.

Recipe Notes

Always use full cream milk for making paneer of cream cheese.Using curd for curdling milk makes it creamier and richer.You can make cream cheese one day before to save time and energy.Instead of making paneer at home,you can use ready made creamcheese.

Methods
  • 1. Boil milk.Add curd gradually and keep stirring.
  • 2. Milk will curdle and greenish yellow whey will be seperated.Remove from flame.
  • 3. Collect the curdled matter in a cheesecloth or muslin cloth put over a strainer.
  • 4. Press a little with the back of a laddle.Hang the muslin cloth so that excess whey is drained out.
  • 5. This is the paneer we require for making cream cheese..
  • 6. Meanwhile,remove cream from the oreo biscuits and beat it with warm melted butter.Keep aside.
  • 7. Crush the remaining biscuits to coarse crumbs.Mix the butter in these crumbs well.
  • 8. Line a springform pan or any mould with aluminium foil and transfer this biscuit crumb to it.
  • 9. Spread it evenly and press firmly with the back of a glass.Keep in refrigerator for at least 15-20 minutes to set.
  • 10. Coming back to paneer, after about an hour,remove it from the cloth. Crumble it with hand.
  • 11. Put in a blender. Add salt,a little whey and blend till smooth and creamy.
  • 12. The cream cheese is ready.Add hung curd,powdered sugar and condensed milk,lemon juice,lemon zest and lemon essence to it and again blend till smooth.
  • 13. Adjust the sweetness and tanginess as per your taste.
  • 14. Spread this cream cheese on the biscuit base.Gently smoothen the top .
  • 15. Put this mould in a broad baking mould half filled with water.This water bath helps to set the cheesecake beautifully.
  • 16. Place this waterbath in preheated oven and bake at 180 degrees for about 25-30 minutes.
  • 17. The cheesecake would be firm from edges but little wobbly from the centre when completely baked.
  • 18. Remove from oven and let it come to room temp in waterbath itself.
  • 19. Once it cools down,keep it in refrigerator to chill for about 4-5 hours.
  • 20. Before serving,garnish it with some crushed oreo biscuits,lemon slices and mint leaves and serve chilled.
