Bengali Vegetable Fried Rice Recipe

This recipe is nothing but a Bengali style ghee bhaat with lots of winter special vegetables stir fried in mixture of oil and ghee. The presence whole spices give mesmerizing flavours and taste. Since Bengali style so this recipe is little bit on the sweeter side.

Ingredients For Bengali Vegetable Fried Rice Recipe

Methods
  • 1. First wash the basmati rice very well. Then soak it for 40minutes to 1hour before cooking the rice so that the cooked rice have long grains .
  • 2. Meanwhile wash all the vegetables well and keep aside. Soak the raisins for 5minutes. Then take large pan. Add 6-8 cups of water, salt and 1tsp of lemon juice.Now let it come to boil then add the rice straining from the soaked water. Cook the rice only 70%. Once cooked staring the rice and dry it..
  • 3. Then take a heavy bottom kadai. Add oil and ghee into kadai. Heat it. Add bay leaf and all other whole spices. Let it crackle. Then add all the vegetables and syir fry on medium-low flame adding pinch of salt. Then add the raisins and stir fry it. Now add the 70%cooked rice in batches and stir fry.
  • 4. Make sure you stir fry very lightly orelse the rice will break. Add salt and powdered sugar and stir fry for 2minutes on medium flame. Then add more rice and stir it. Add all the cooked rice into batches and stir fry everything for 5-8mintues. Add more salt and sugar if required.
  • 5. While stir frying splash little water in between so the rice dont break.
  • 6. Once everything is properly stir fried its completely done. Serve hot with fish kalia or mutton curry.
