Broken wheat payasam recipe

Payasa is the popular dessert in Karnataka. There are varieties in it...moong dal payasa, chana dal payasa, rice payasa, broken wheat payasa, rawa payasa etc. are to name a few. Though I like all varieties I do not the the plumpy texture of cooked broken wheat. So today I ground the broken wheat & made payasa from it. Also usually clove is added to flavour but I used mace & nutmeg instead.

Ingredients For Broken wheat payasam recipe

Methods
  • 1. Wash and soak broken wheat for an hour.Later grind it to paste along with mace & nutmeg. Fine semolina like texture is fine.Transfer to a bowl.
  • 2. Cook this stirring occasionally till done. Add 1 cup water to jaggery & boil for 5 min. Add this to cooked broken wheat passing through a strainer. Boil for 2 min.
  • 3. Add coconut milk and salt. Just give one boil and turn off heat.
  • 4. Fry cashew and raisins in ghee and pour over payasam. Serve hot or warm.
