Daal Paniya is a traditional dish from malva.(M.P) These paniyas are cooked in a tandoor which gives them a smoky flavour when dipped in the dal. If you love spicy food, you must give this traditional Malva dish a try as it is super flavourful.

  • 1. Firstly take bowl.Add maize flour,salt, sugar powder. Add milk and lukewarm water and bring together to make a dough. Shape the dough into small balls and flatten slightly (like bati). Cover these balls with the aak plant (calotropis gigantea leaves on both sides.
  • 2. Heat a gas tandoor and roast the dough balls on low heat for some time or till the leaves burn and the balls’ colour changes.Turn once during roasting.Dip the paniya in ghee.
  • 3. For the dal:Cook the urad and chana dal in a pressure cooker for 10 to 15 minutes or until cooked.Heat oil in a pan and add cumin,bayleaf asofoetida, followed by the green chilli,ginger garlic paste and let them splutter.
  • 4. Add onion and saute for 1 minute.Add tomato Add the red chilli, turmeric powder and coriander powder ,salt and mix well.
  • 5. Add the cooked dal.Bring it to a boil and leave to simmer for five minutes.Add lemon juice,garam masala,coriander leaves.Serve hot with paniya
