Deconstructed mango cheesecake with mango-mixed berries compote recipe

This is a beautiful dessert I have created using Nestle milkmaid. There are several elements, including a digestive biscuit crumble, mango flavour cheesecake base and mango mixed berries compote. You can make the individual elements ahead of time and assemble while serving.

Ingredients For Deconstructed mango cheesecake with mango-mixed berries compote recipe

Methods
  • 1. Firstly, to prepare the compote, mix together 50 gram of fresh mango pulp and mix berries. In a pan, cook this mixture in medium heat. Add the sugar and keep cooking till the mixture thickens and turns glossy. Set aside and chill till further use.
  • 2. To prepare the crumb, first, crush the digestive biscuits. Mix melted butter with the biscuits very well. As we are preparing a deconstructed version of the recipe, we are not setting it in the form of a crust.
  • 3. Next, to prepare the cheesecake, take the cream cheese, cream in a bowl and whisk till soft peaks. Add Nestle milkmaid and mango puree until well combined. (Set aside some mixture before adding mango puree. ) Pour in small moulds or ramekins and refrigerate until set well.
  • 4. Now to assemble the dessert, place one portion of the cheesecake mixture in a serving plate. Scatter some crumble and dot around with the mango-mixed berries compote. Drizzle some compote over the cheesecake and make some decorations.
  • 5. Spread some cheesecake-cream-Nestle milkmaid mixture that we had reserved before adding mango puree. Finish off by adding some fresh mangoes.
