Mix sugar with half a cup of water and cook to make syrup of three thread consistency. Keep warm. Sift the flour and baking powder, add two tablespoons of ghee and knead to a pliable dough.

Divide the dough into equal portions and using a rolling pin roll out into ovals. Make several slashes on the ovals with the tip of a knife or a fork.

Heat sufficient ghee in a pan and deep-fry the gojas till brown and crisp. Remove with a slotted spoon and place on an absorbent paper to remove excess ghee.Dip the fried gojas in sugar syrup, coat rapidly and remove quickly. Toss till dry and crisp.
