  • 1. Chop the cucumber into dices, cherry tomatoes into half, capsicum and onions into julienne.
  • 2. Now make the dressing. Take a bowl put olive oil, lemon juice, oregano, salt and pepper and whisk it all together.
  • 3. Now mix the chopped vegetables into the dressing bowl toss the dressing. Sprinkle with cheese and croutons and serve.
