Biriyani is one of the most delicious regional dishes in all over India.. There are many varieties of biriyanis in every region of India by their different spices and aroma.. Today I have prepared this veg biriyani in Bengali style..

Ingredients For Green peas kofta biriyani recipe

Methods
  • 1. In a bowl, take some water and add frozen green peas and let them boil.let the peas become soft. Mash green peas, potato, all spices together with chickpea flour and deep fry it in the shape of balls. koftas are ready.
  • 2. Now we have to prepare the gravy for kofta biriyani. For this, in the same oil add some kashmiri red mirch. It'll bring nice red color. Then add all the pastes one by one. Fry all of them in midium heat, when the oil will start separating, add 1/2cup hot water.. Let it boil..
  • 3. Add the koftas into the gravy, and cook them for 5-6minutes. When the gravy becomes thick switch off the flame and add garam masala powder into it. Mix it well.
  • 4. Wash the basmati rice and drain the water. In a vessel, boil water along with whole garam masalas, bay leaves and salt. When it starts boiling, add the rice..let the rice be cooked 80%. Now strain the rice from the starch..
  • 5. In a small microwave proof bowl take the milk and heat it along with saffron and butter, add ghee into it.
  • 6. For layering of biriyani,in a heavy bottom pan pour some rice first, then sprinkle some black paper powder,biriyani masala, saffron milk mixture, kofta gravy and fried onion. Add some green peas koftas on the top..again add some rice on it and repeat the same layering process..
  • 7. On the top of the layer, sprinkle 1tbsp rose water, keora water and coriander leaves. Now cover the vessel with lid.. Keep the flame in medium for first 10minutes and in low for next 20minutes, don't open the lid in this time..now switch off the flame and keep it covered for more 10minutes..
  • 8. After that you can serve it.
