While transferring to the butter paper. Be careful, as it'll be too hot. Let it cool down using spatula. And then tap and turn on different sides on the butter paper only.

Methods

How to make Halwai style perfect kaju katli Recipe

1. Take 2 cups cashews. Blend it to a fine powder.
2. Sieve it through a fine strainer.
3. Take a pan. Add half cup water and 1 cup sugar.
4. Make one string consistency chashni.
5. Now add ground cashews. Whisk it well for 5 to 10 mins.
6. Now add 1tbsp nova desi ghee. And mix it well.
7. It should be of following consistency. Not too thick nor too thin.
8. Now transfer this batter to a butter paper. As it will be to hot, handle carefully.
9. Once it gets slightly cool down. Form into a dough using 1tsp ghee here. And spread it to into 1 inch thickness on the same butter paper.
10. Take silver varak and paste it on the batter. Cut into desired shape. And your kaju katli is ready to be served.
