Kothimbir Vadi Recipe

Kothimbir Vadi is one of the most popular snack from Maharashtra which us made using fresh coriander leaves, besan or gram flour and spices. Coriander Leaves means Kothimbir in Marathi which is the main ingredient of this recipe.

Ingredients For Kothimbir Vadi Recipe

Methods
  • 1. Take besan, rice flour, curd, grated ginger, green chilli paste, salt, turmeric powder, red chilli powder, dhania jeera powder, sugar and baking soda in a mixing bowl. Mix well and gradually add water to make smooth flowing consistency batter. Make sure no lumps are there.
  • 2. Heat oil in a big kadhai on medium flame. Add jeera, hing, sesame seeds and let it crackle. Add crushed peanuts, mix and cook for 2 to 3 mins. Whisk prepared batter again and add to the kadhai stirring continuously.
  • 3. Cook till mixture thickens. Keep stirring continuously and add chopped fresh green coriander leaves, mix well and further cook for 4 to 5 mins stirring continuously. Switch off the flame. Transfer the prepared mixture to the greased plate. Level with spatula and sprinkle some sesame seeds on top. Let it cool down completely and set for 2 to 3 hrs.
  • 4. Cut in desired size and shape. Deep fry in heavy bottom flat kadhai till it turns golden brown from all sides.
  • 5. Serve hot delicious Kothimbir Vadi with tomato ketchup, tamarind dates chutny or can be served alone.
