Clean the rice and lentils, and wash them thoroughly and soak them in water for 1 hour. All the vegetables have been washed and cut. Put ghee in the cooker and heat it. Now put asafoetida and cumin seeds in hot ghee. After cumin turns brown, add black pepper, clove, turmeric powder, green chili, ginger. Stir with a spoon 3-4 times, now put all the vegetables in this masala. Roast the vegetables by stirring them for 2-3 minutes.

Now add dal and rice. Fry for 2-3 minutes while stirring with a spoon. Add five times water with same bowl you used to measure pulse and rice. ( If lentils and rice are 1 1/2 bowls, then put 7 1/2 bowls of water) Also add salt as per taste. Close the cooker. As soon as one whistle comes, immediately switch off the gas. By raising the whistle of the cooker with the help of a spoon, remove half of the pressure of the cooker.

After 4 - 5 minutes, when the pressure of the cooker is over, open the cooker. Your Vegetable Khichdi is ready. Take out the khichdi (mixed veg. khichdi) in a big bowl. Garnish with green coriander on top. Serve hot veg khichdi with butter in it and keep curd, pickle or green coriander chutney along with it.
