Recipe Notes

White making Malpua batter do not add more milk add milk little by little to adjust the consistency. Batter should be not too thick not too thin. It should be in consistency that itself holds the proper shape while pouring it on pan.

Ingredients For Malpua With Oats Rabri Recipe

  • 1. For Malpua take a bowl and add milk into it. Add khoya into milk and mix it well. Add all purpose flour, fennel seeds and cardamom powder and mix it well.
  • 2. Make sure there will be no lumps. To adjust the consistency add milk if required.
  • 3. Batter should be in medium thick consistency. It not should be too thin or not too thick.
  • 4. Beat it for 4-5 minutes to get fluffy Malpua.
  • 5. Cover it and keep it aside to rest about 3-4 hours.
  • 6. Meanwhile to make sugar syrup take a pan and sugar into it. Add enough water that covers the sugar.
  • 7. Flame should be medium. Stir it and make single thread sugar syrup.
  • 8. Turn off the flame and put this pan into water so crystal doesn’t form into crystals.
  • 9. To make oats Rabri take a pan and milk into it. Flame should be medium. Stir it and boil it until milk quantity reduced to half.
  • 10. Stir it occasionally and mix the malai that forms on pan’s side walls.
  • 11. When milk is reduced to half, add sugar into it and mix it well. Add cardamom powder, Almond slivers, Pistachio slivers and mix it well.
  • 12. Now add coarse crushed oats into it and mix it well.
  • 13. Cook it for 5-10 minutes and stir it occasionally on medium to low flame.
  • 14. After that turn off the flame and let the Rabri cool down and put it into fridge for 1-2 hours.
  • 15. Now to make Malpua, beat the batter again for 1 minute. Add milk if required to adjust the consistency.
  • 16. Now take a pan and add ghee into it. When ghee turns hot add the batter using spoon.
  • 17. Fry both sides until it turns golden brown. Add fried Malpua directly into the sugar syrup and keep it for 10-15 minutes.
  • 18. At this stage if Crystal is formed into syrup add little water and boil it.
  • 19. Remove the Rabri from fridge.
  • 20. Take a serving plate and place Malpua and pour cold oats Rabri on it. Garnish it using dry fruits and saffron strands. Serve it.
  • 21. Holi special Malpua with oats Rabri is ready to be serve.
