Malpua is a ghee-fried pancake made from all purpose flour batter. (I have made it with wheat flour.)Then dipped into the sugar syrup. Many times it is topped with warm rabdi.

To prepare sugar syrup add sugar and water in a pan and heat it to make 1 string sugar syrup. Switch off the flame.

Mix wheat flour,sooji,sugar, fennel seed powder and cardamom in a mixing bowl. Add warm milk in batches to make batter of flowing consistency.

Cover the batter bowl and keep it aside for 15 minutes.Then add fresh cream and beat it for 1 minute.

Heat ghee in a pan for frying malpua.Lower the flame. Take 2 tbsp to 3 tbsp of the batter and gently pour it on the hot ghee. Spread the batter lightly with the back of the spoon. Make 2 to 4 malpua depending on the size of the pan.

Malpua will float by itself .that time turn the side of malpua and fry it till golden brown and crisp from both the sides.

Drain them on paper towels to remove excess ghee.

Then immediately place them in the warm sugar syrup. Gently coat the malpua with the sugar syrup with a spoon or small tongs.

Immediately remove them and place them in a serving tray or plate. Prepare all malpua this way and coat them with the sugar syrup.

Enjoy the malpua .I have served it with thandai rabari as my family likes it with rabari .
