Mango Rose Cheese Cake Recipe

Today I am going to present a very interesting dessert. It is Mango Rose cheese cake. Traditionally cream cheese is used to make this cake. But as it is not available everywhere and little bit costly so I have replaced it with paneer, hung curd and thickened milk. Together it tastes awesome.So here is my recipe for Mango Rose Cheese Cake.

Recipe Notes

For best result put the mango slices over it just before serving. Alternatively you can use clear edible gel to coat the mangoes to keep them fresh.

Methods
  • 1. In a grinder grind the digestive biscuits and mix with butter.
  • 2. Take a spring foam pan, cover with butter paper and pour this biscuit mixture.
  • 3. Press hard to level. Keep in freezer until set.
  • 4. Boil milk and condensed Milk until thickens.
  • 5. In a bowl mix together mango pulp, paneer, hung curd, mango flavour, powdered sugar and with a electric whisk give it a very good mix till smooth.
  • 6. Add warm water in gelatin and let it bloom.
  • 7. Add cornstarch in cold water, mix and add in milk and stir continuously until smooth.
  • 8. Mix this milk mixture in mango mixture and give it a very good mix.
  • 9. Add the gelatin in this mixture and blend uniformly.
  • 10. Now pour this mixture over the biscuit base.
  • 11. Set in freezer 5 hours or overnight. I prefer overnight.
  • 12. For jelly topping, boil the mango juice and gelatin until smooth.
  • 13. Pour this mix over the top of the set cake and again chill for 1 hour until completely set.
  • 14. Decorate with mango slices in rose shape and serve chilled.
