Methods
  • 1. Combine the two flours as well as the sooji. Mix well.
  • 2. Add kalonji, ajwain, and black pepper powder along with kasoori methi powder.
  • 3. Add salt to taste and mix well.
  • 4. Add oil and rub it gently with the flour. The texture of flour should become grainy.
  • 5. Add little water at a time till it forms a semi soft dough.
  • 6. Apply little oil and wrap the dough on a cling film. Leave it to rest for 15 minutes.
  • 7. Heat oil in a hollow frying pan (kadhai).
  • 8. Make equal sized small balls of the dough. Apply little oil to the dough balls and roll them out in a small disc shape. Pierce the mathris randomly with a fork.
  • 9. Fry these mathris in hot oil till golden brown in color flipping them when they start browning on one side. While frying, press them down gently with slotted spatula for even coloring and getting cooked inside too.
  • 10. Remove from pan and transfer to paper covered with paper napkins to drain excess oil.
  • 11. For crunchy and crispy mathris, cool them. Serve with tea.
