The Foxtail Millet Kheer Recipe (Millet Pudding with Saffron & Nuts) is a delicious addition to the traditional kheer that we make usually with rice. So let's learn how to make millet kheer.

Wash and soak millet in water for 2hours. Drain extra water. Keep aside.

In pan make jaggery syrup, take jaggery powder and water. Mix well until jaggery dissolve completely. Keep aside.

In kadhai, heat clarified butter, fry dryfruits in it for minute. Takeout into a plate. When it cool completely. Chop it.

In same ghee, fry soaked millet for 3minutes.

Now boil the milk into a heavy bottom pan keep it on medium heat. Once the milk comes to a boil, add millet and saffron strands to the milk.

Simmer the kheer until the foxtail millet cooks comletely. This will take about 10 to 15 minutes. (You will have to take a bite to check)

Once the foxtail millet has cooked through completely, add jaggery syrup and simmer for another 10 minutes, stirring occationally so the milk does not condense and settle to the bottom.

Add dryfruits, mix it. Turn off the heat and the millet kheer is now ready to be served. Serve this kheer hot.
