Recipe Notes

You can simply top kewra firni with chopped mango or berries instead of adding various flavours.Instead of rice,you can use 3 tbsp rice flour also.In that case,dissolve it in water and let rest for about half an hour.

Methods
  • 1. Wash rice thoroughly. Soak it for 2 hours in water just enough to cover them.
  • 2. Now taking little milk at a time,grind rice to fine milk. Pass it through strainer.
  • 3. Again take some milk,add to the strained rice and grind. Strain.
  • 4. Repeat the process till just little rice pieces are left. You can now add these to the strained rice milk.
  • 5. Now in a thick bottomed pan,boil this milk. Be very very careful to keep stirring whole of the time otherwise, it may stick to the bottom and give burnt taste.
  • 6. Once it starts thickening,add sugar and crushed cardamom seeds. Keep stirring till it reaches dropping consistency (just like idli batter).
  • 7. Turn off the flame. Remove pan from the burner and let cool.
  • 8. Once it reaches room temp,add kewra essence,mix and divide in eight small bowls or glasses. All parts have to be refrigerated for at least 4-5 hrs as it tastes best when chilled.
  • 9. Now,for rose flavour mix desired quantity of rooh afza or rose sharbat to two glasses of firni before keeping in fridge. Let set in fridge. Before serving, garnish it with crushed dry rose petals and pistachio slivers.
  • 10. Similarly,before serving,puree one mango,spread it on the top of other two glasses of firni. Garnish with mint leaves.
  • 11. You can also mix mango puree in firni instead of just topping. Then you have to mix it before keeping in fridge, just like rose one.
  • 12. To other two parts,add strawberry compote just like mango.Garnish with mint leaves.
  • 13. Garnish the rest of the two glasses with piatachio slivers only or you can add flavour of your choice.
  • 14. Enjoy this delicious dessert any time of the day.
