Firstly, boil milk and once the milk start boiling, add lemon juice and mix well till the milk curdles. Once the milk has curdled, drain off the whey and rinse the chena with water, to remove sourness.

Now remove excess water from the chena and transfer to a big plate. Mash this with the help of your palms into smooth texture.

Now heat up ghee in a pan over medium heat. Add the gur and keep stirring. When the nolen gud completely melts, add the mashed chena and stir continuously. After sometime, it will start separating from the pan.

At this point, transfer the mixture into a greased tray. Top with chopped pistachios. Let it set. After that, cut them into square shapes and enjoy.
