Rabri Ghevar Malai or Rabri ghewar is traditionally eaten during saawan and teej celebrations an Gangaur festivals in Rajasthan. Today I am here with ghewar recipe along with instant rabri recipe. It a disc type sweet noramlly eaten soaked in sugar syrup and topped with rabri.

Ingredients For Rabri Ghewar Recipe

Methods
  • 1. For Ghevar, take a blender jar, add 1/3 cup ghee and 7-8 ice cubes and blend it till ghee becomes creamy.Now add curd into it, blend it again till ice, ghee and curd get mix well.
  • 2. Add maida and chilled water in batches and blend it till you get a Creamy batter.Ghevar batter is ready. Transfer this batter to a bowl.
  • 3. Take a sauce bottle or a water bottle and make a hole in it's lid, fill this with batter. Now take a deep vessel of medium size, add three cups of ghee for deep frying, heat it. Pour the batter in center in small amount,Repeat this process in intervals. Until you see a disc.
  • 4. Take a ladle and make the hole in center,Soon we will see a perfect ghevar in our vessel. Take out ghevar with the help of ladle. Keep the ghevar in one colander so that excess ghee will strain in a plate.
  • 5. Sugar syrup, take a pan add sugar and water. Make one string consistency sugar syrup bu boiling it for 5-7 mins.
  • 6. For instant rabri, take a heavy bottom wok, add milk and boil. Mix milk powder in two tbsp milk and add to it.Keep stirring. Boil the milk for 10 mins on slow flame.Cut the sides of breads and grind it.Take a pan add ghee and roadt the bread powder. Add this to the boiling milk and mix well.Add sugar.
  • 7. Add cardamom powder and chopped dry fruits to Rabri . Instant Rabri is ready. Spread it over ghewar and keep it into freeze.
  • 8. Assemble the ghevar with sugar syrup and Rabri, garnish with silver sheet and dry fruits. Serve this very very delicious and authentic delicacy from Rajasthan.
