Gujia is a very traditional sweet in Holi. Ranga means red, I named it Ranga Gujia because of that I used red potatoes in Gujiya. Holi / Dol Rang festival, so I made Ranga Gujia.
How to make Ranga Gujiya/Sweet Potato Gujiya Recipe

First boil the red potatoes.

Peel a squash, grate it .

Mix salt and 2 tablespoons ghee well in the flour.

Make a dough with a little water and leave it.
5.
Now put semolina with ghee in the pan

Lightly fry the semolina and add the boiled red potatoes

Now mix khoya kheer, sugar and powdered milk and keep stirring

Sprinkle with cashews and raisins, cardamom powder and let it cool completely.

Make small ball from the dough

Now take the sand one by one and fill the inside with red potato puree and close the mouth and give the sides the shape of naxa (Gujia mold is also available to buy / but I made it by hand)

Now mix 1 cup of water, 1 cup of sugar and saffron, cardamom in 1 pot and make a little chit chit syra.

Gujia is all made. You have to put a lot of hot ghee in the pan for frying Gujia (you can fry in white oil if you want / of course frying in ghee will make the test great). Fry the gujia in ghee till it is very red and add sugar syrup and take it out after 2/3 minutes

Then sweet potatoe gujia/Ranga gujiya made after decorating it beautifully.
