Heat 1cup of water in a pan, add the mango pieces and cook on low heat for 4 to 5 minutes until the mango pieces are little soft. Drain and keep aside the mango pieces and the mango stock separately.

In a pan, combine the sugar the mango stock and cook on low heat until the sugar has dissolved. Stir occasionally. Add the mango pieces, half of saffron, cinnamon and cloves to the sugar syrup and cook over a slow flame till the syrup is of two string consistency.

Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize. Transfer the mango pieces to the cooling rack and spread to separate the individual pieces.

Once completely cool dry in sun. Mix green cardamom powder, remaining saffron with Boora or powdered sugar. Wrap each slice of mango with it.

Store in airtight jar.Uses-use as mukhwas, in salads, icecream topping and in cakes .
