Sabudana vada will break in oil if the dough contains excess moisture or the temperature of oil in not right.

Ingredients For Sabudana vada Recipe

Methods
  • 1. Firstly, Rinse the sabudana 1-2 times and drain all the water. Soak the sabudana in 2 cups of water for 2-4 hours (time may vary based on the quality of sabudana. I soaked mine for 2 hrs).
  • 2. They will double in size after soaking and you can easily mash them between your fingers. Also, make sure they are soaked well else unsoaked sabudana may burst in oil.
  • 3. Dry roast peanuts in a pan on medium heat till they get brown spots and let them cool. Grind into a coarse powder.
  • 4. Next peel the skin of potato and grate them. Squeeze to remove any moisture from the potato and transfer in a bowl
  • 5. Add the sabudana, ginger, chopped green chilies, peanuts , salt, red chile powder, coriander leaves, chat masala and mix well and make rounds balls fro. This mixture
  • 6. Now Heat oil for frying all vada.. Until golden brown.
  • 7. Transfer it to paper towel to absorb any excess oil. Repeat the process for remaining mixture.
  • 8. Sabudana Vada is now ready. Serve hot with green chutney, tomatoes sauce and enjoy endless.
