Peel the sweet potato and wash it thoroughly. Pat dry and cut into roundels. Steam cook it. Once cooked mash/ purée it. Heat ghee in a heavy bottom pan.

Add the sweet potato purée. Sauté well ( low flame)Add the jaggery powder.Keep stirring.

Add the Almond powder.Mix it well add the saffron too.Keep stirring till the mixture leaves the sides of the pan,and comes together to form a mass.Cool it.Once cooled take a medium size ball from the dough,roll it in your palms until smooth and then flatten slightly to form leads.

Top each peda with pistachios..NOTE. I have used almond meal you can use milk powder, mawa of your choice..
