Ingredients For Szechuan Lobster Recipe

Methods
  • 1. Prepare the sauce: mix together the hoisin sauce, chili sauce, soy sauce, fish sauce, chili paste, with garlic, sugar, sesame oil, hot chili oil, and 1/2 tsp of the peanut oil.
  • 2. Reserve.
  • 3. Add the remaining 1/4 cup of the peanut oil to a large very hot wok over very high heat and heat until the oil is smoking.
  • 4. Salt the half cut lobsters lightly and add them to the hot wok.
  • 5. Sear the cut surfaces until the lobster is just about cooked 3-4 minutes.
  • 6. Remove the lobster and place them on a platter.
  • 7. To the oil remaining in the wok add the ginger, scallion, garlic and dried chilies.
  • 8. Stir fry for 1 minutes.
  • 9. Add the lobster pieces and toss to blend well.
  • 10. Add the reserved sauce and toss to blend well.
  • 11. Turn the mixture out onto a platter and serve immediately.
