Ingredients For Masala Baigan Recipe

Methods
  • 1. Whisk the curd. Cut the brinjal and potatoes into little big pieces.
  • 2. Heat ghee and butter in a wok. Fry brinjal and potatoes till it becomes soft. Remove it in a plate.
  • 3. In same wok add tomato puree. Cook it for 2-3 minutes. Add whisked curd in it. Mix it well. Stir continuously.
  • 4. Add fried brinjal , potatoes and ghee roast masala. Mix it well.
  • 5. Add water to adjust consistency. Taste the spices. Cook for 2-3 minutes.
  • 6. Transfer it in a serving bowl. Garnish with chopped coriander leaves.
