Veg Manchow Soup

Manchow soup is a soup popular in Indian Chinese cuisine due to it’s easy preparation and hot spicy taste. As we know winter is a season of green vegetables. So I have prepared this spicy soup & it’s a perfect winter recipe. Enjoy this hot and spicy soup in cold winter evening.

Recipe Notes

Add MSG-Aji no Moto is completely optional you can skip it. But if you want restaurant style taste then add pinch of MSG. You can make vegetable stock by adding any raw vegetables like carrots, cauliflower, celery etc.

Methods
  • 1. First to make vegetable stock take 1.5 liter water in a pot.
  • 2. Add handful of coriander leaves and boil it on medium flame.
  • 3. Mean while to make noodles, take a pot and add water into it.
  • 4. Add salt and oil and let it boil.
  • 5. When water starts boiling add noodles and cook it on medium flame.
  • 6. Do not over cook.
  • 7. When noodles are cooked strain it into a strainer and pass cold water from it so cooking process is stopped.
  • 8. Add oil into the cooked noodles and mix it gently.
  • 9. To fry noodles, Take a pan and oil into it.
  • 10. Let oil turns hot.
  • 11. Now Dust the corn flour into cooked noodles and mix it well.
  • 12. When oil turns hot deep fry the noodles until soft brown.
  • 13. Remove it on kitchen paper and keep aside.
  • 14. To make Soup, take a pot.
  • 15. Add oil into it.
  • 16. When oil turns hot add chilli paste, ginger, green garlic and garlic and saute it.
  • 17. After that add onion and mix it.
  • 18. Add all vegetables and cook it for 1 minute on high flame.
  • 19. Add salt and black pepper powder and mix it well.
  • 20. Now add soya sauce, chilli sauce and vinegar and mix it well.
  • 21. Add MSG and mix it.
  • 22. Now statin the stock and add it into the pot.
  • 23. Boil it for 5 minutes.
  • 24. Meanwhile take a bowl add 2-3 tbsp of cornstarch and mix it with enough water and make slurry.
  • 25. Add this slurry to the soup and boil it. You can see after a minute soup starts becoming little thick.
  • 26. If soup doesn’t turns thick add more slurry.
  • 27. Make sure it doesn’t become too thick.
  • 28. Boil it on high flame for 5 minutes.
  • 29. Lastly add spring onions and coriander leaves and mix it well.
  • 30. Serve hot.
