Ingredients For Al Yakhni Recipe

Methods
  • 1. Peel and wash the bottle gourd, cut it into pieces. Heat oil in a pan and fry the bottle gourd. Take it out in a plate and keep it aside.
  • 2. Whisk the curd . Keep it aside.
  • 3. In the same pan, take out all the remaining oil leaving two spoons of oil.
  • 4. Heat the oil, add cumin, asafoetida, cardamom and cloves. After frying for a few seconds, add curd to it. Fry it on low flame while stirring continuously. Now add all the dry spices in it. Mix it well with curd.
  • 5. When the masala starts leaving oil, then add fried bottle gourd and water as required and cook it for 3-4 minutes on low flame.
  • 6. Switch off the gas, take it out in a serving bowl, garnish with green coriander, serve it hot with lentils, roti, rice etc.
