First wash and dry the brinjal. Cut it into round-about 1 inch thick pieces.

Mix all the ingredients except oil and brinjal in a plate.

Wrap that dry spice well in each piece of brinjal and keep it in a plate, leave it like this for 10 minutes.

Take a non stick tava (griddle), add oil and heat it. Now spread all the pieces of brinjal one by one on the tawa. Bake on low medium flame till crisp.

When it is cooked from one side, then gently flip them and cook on the other side till they become crisp.

Switch off the gas and take them out in the serving plate. Put green coriander on top. Crispy brinjal bhaja is ready. Serve it with dal rice.
