Coco Choco Nutty Lamington (Lamington er Malaikari) Recipe

Just think about a cricket team having batsman Sachin Tendulkar and bowler Shane Warne. The team will rock. My dessert is no way less than that. As in this platter, India meets Australia.. One of the traditional Indian Malaikari combines with the traditional Australian dessert Lamington and creates this innovative Lamington or Malaikari. The experience for taste buds is moreish and tantalizing. The preparation of the chocolate sponge is easy-peasy. But when coconut cream and coconut milk infused with it, it becomes more rich and creamy. It is also layered with nutty crumble and strawberry compote so that it can create a smooth but exciting flavours. Even an anti-chocoholic can fall in love with it like me.

Ingredients For Coco Choco Nutty Lamington (Lamington er Malaikari) Recipe

Methods
  • 1. First whisk the eggs with hand whisker. Once it creates firm white peaks, mix powdered sugar in it.
  • 2. The mixture becomes firm, add melted butter and mix till it absorbs. Then add coconut milk it and mix well.
  • 3. Add the coconut cream into mixture and mix well.
  • 4. In a separate bowl, mix flour, cocoa powder, baking powder and baking soda and stain it to make it lumpfree. And add it to already prepared wet ingredients, mix it till it gets incorporated.
  • 5. Preheat a convection oven 200degree centrigate for 10 minutes and bake the mixture at 180 degrees centrigate for 20-25minutes.(until an inserted toothpeak comes out clean)
  • 6. In a separate pan, put some butter and saute the strawberry, then crush the strawberry into mixer grinder, put the mixture again in the pan. Put some powdered sugar, some salt and black salt as per taste.
  • 7. Heat one pan and put almond cuts, pistachio cuts, and stir it till it becomes crunchy.
  • 8. Take dark chocolate compound, melt it in double boiler method.
  • 9. Once the sponge is cool, cut it into 5 pieces, cut it into two layers, put some strawberry compote in between, add some nutty crumble and join the layer with the left over sponge.
  • 10. Take the stuffed sponge and put it into melte d dark chocolate for coating. Once the coating is done.Coat it with shredded coconut. Put pinch of salt and butter on top it and serve.. Enjoy it with friends and family.
