DAAB CHINGRI RECIPE

Daab Chingri is a famous Bengali recipe where prawns are cooked in tender coconut which makes an aromatic delicacy. For this recipe, we need a tender, meaty, young coconut which is popularly known as " shash ala daab" in Bengali. Cut the top part carefully to make a hole. The cut part when put on the coconut, looks almost like a lid. Cut a little bit at the bottom so that it stands well on the oven while cooking. Scoop out the flesh part.

Methods
  • 1. Wash and clean prawns thoroughly.
  • 2. Keep the tails intact.
  • 3. Drain out excess water.
  • 4. In a grinder add coconut flesh and coconut water to make a smooth paste.
  • 5. Heat 1 table spoon of mustard oil in a pan.
  • 6. Fry the onions until translucent.
  • 7. Now add ginger ,garlic and green chilli paste. Mix them well.
  • 8. Add salt. Stir for few seconds.
  • 9. Take them out from the flame.
  • 10. In the same pan heat 1 table spoon of mustard oil. Add panch phoron.
  • 11. When it sizzles, switch off the flame.
  • 12. Now in a mixing bowl add coconut flesh paste, fried onion, sauted panch foron, mustard paste, slit green chillies, turmeric powder, remaining mustard oil, sugar and salt. Mix it well.
  • 13. Add prawns in it. Cover and marinate for 25 to 30 minutes
  • 14. Put the marinated prawns including the mustard and coconut flesh in the daab or the tender coconut.
  • 15. Put the cut portion on the top of the coconut and seal it with flour dough so that steam doesn't escape.
  • 16. Now place the daab on the oven and cook it on medium flame for 35 to 40 minutes
  • 17. Switch off the flame. Keep it as it is for 10 minutes.
  • 18. Open it and serve hot with steamed rice.
